I use Motorex Top Speed 10W40, OEM oil filter and new drain bolt gasket every time and change every 5000km (4 times per Year)

I tried looking it up online but I'm not able to find stock anywhere .

Could you recomend any other alternatives and in the meanwhile I'll try to find if its possible to buy it anywhere.

Just wanted to confirm if this is the one you are talking about.

    Yes, that Oil.

But, you can use Oil for Motorcycles with MA standard for wet clutches, Motul 5100 semisyntethic), 7100 full synthetic), Valvoline etc - there is plenty of Manufacturer with good oil, just be aware that it must be oil for motorcycles with MA (or MA2) standard and appropriate weight (10W40 is good for EU generally, 15W50 for hotter climates could be better choice.

In short, any semi synthetic of full synthetic with MA (MA2) standard from reputable manufacturer and appropriate weight and Z900 will be fine

Any opinion on Shell and Swepco?

And what about using k&n oil filter instead of the stock Kawasaki one?

Shell is OK, dont know about Swepco. Oil Filter.... I use only OEM, had no expirience with k&n, but, it is reputable manufacturer and people use it on Z900 without problems. Same goes for Hiflo oil filter.
